Values of dielectric constant (E') and loss factor (E") for pigeonpea in the form of powder were experimentally determined at 10.7 GHz microwave frequency. All the measurements were carried out at various particle sizes and temperatures (20, 30, 40 and 50°C). The values of E' and €" were used to evaluate loss tangent (tan 8), the conductivity (σp) and relaxation time (,) for different particle sizes and temperatures. The energy parameters for dielectric relaxation process AF, AH and AS for pigeonpea showed that there was a fair agreement between the values obtained experimentally and theoretically, which shows large cohesion in the particles of the pigeonpea powder under investigation.
